Corn-free “Cornbread” Stuffing – A Great Addition to Your Paleo and Gluten-Free Table

Are you looking for a “Cornbread” Stuffing recipe that tastes great, has the texture of cornbread…but won’t create any leaky gut side affects? This recipe is truly delicious. You can just make the “Cornbread” too!

It is made with a combination of coconut flour, arrowroot flour and tiger flour -( which is naturally gluten free and from a root vegetable. Found on Amazon and Vitacost).

You will love this new addition to your holiday table!

Ingredients

For the corn-free cornbread
  • 1/2 cups tiger nut flower
  • 1/2 cups coconut flour
  • 1/4 cups arrowroot flour
  • 2 tspn baking powder aluminum free
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 1 cup coconut milk
  • 3 tbsp palm shortening
  • 3 tbsp honey
  • 1 tbsp apple cider vinegar raw
  • 1 tbsp grass-fed gelatin powder
For the stuffing
  • 1 Prepared cornbread chop into 1-inch pieces
  • 1 onion diced
  • 3 stalks celery thinly sliced
  • 1 tbsp olive oil
  • 1/4 cups dried cranberries
  • 1 tsp rosemary finely minced
  • 1 tsp fresh sage finely minced
  • 1 tsp dried thyme
  • 1/2 cups chicken broth
  • sea salt to taste
  • ground black pepper to taste

Instructions

Prepare the corn-free cornbread
  1. Preheat the oven to 325 degrees Fahrenheit. Line an 8×8 inch baking dish with parchment paper.
  2. In a large bowl, combine the first 6 “cornbread” ingredients: tiger nut flour through sea salt. Whisk together.
  3. In a medium bowl, combine the rest of the ingredients and whisk together until smooth. If you need to, heat the coconut milk gently to get the shortening to dissolve.
  4. Add the wet ingredients to the dry ingredients and mix together. Allow to sit 5 minutes to thicken, then transfer to the prepared baking dish.
  5. Bake in a preheated oven at 325 degrees Fahrenheit for 40-50 minutes, or until the center of the cornbread is set. If the edges start to brown too much but the center is not set yet, reduce the heat to 300 degrees and bake until the center is set.
  6. Allow to cool, then chop the bread into 1-inch pieces.
Prepare the stuffing:
  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Sauté the diced onion and sliced celery in olive oil for 8-10 minutes over medium heat. Don’t allow the onion to burn.
  3. Add the dried cranberries and herbs and cook for another 2 minutes.
  4. In a large bowl, combine the sautéed vegetables and most of the chicken broth. Stir in most of the chopped “cornbread” and mix gently, taking care not to break up the “cornbread” too much. Add a few more tablespoons of chicken broth if you like a “wetter” stuffing.

Metabolism – The “Holy Grail” of Wellness

What is metabolism? Metabolism is converting fuel to energy…OR food to fat and free radicals (which creates massive inflammation and damage. This is like rust on the inside and creates hyper- accelerated aging) A damaged metabolism massively weakens our immune system. Why? Because our immune systems needs energy, energy, energy to work correctly.

The Mitochondria is in every cell of body. This is where we make energy. Metabolism really happens on the cell level.  We want them to be efficient. LLLT (Low Level Light Therapy) or Photbiomodulation, uses low levels of light to activate or energize and rev up the mitochondria so that we not only make more energy, but make more of the mitochondria. Our metabolism depends on how many mitochondria we have! This is called Mitochondrial Biogenesis. If we are healthy, we have up to 2000 per microscopic cell in our heart and our brain. When they work right, they generate energy called ATP.  This ATP is recycled many times and a 145-pound male should make at least 160 pounds of  ATP a day. When we are not healthy, we don’t make enough. Now we are tired, we put on fat, we ache, and many other problems.

By 2030 half of all Americans will be overweight. If you are even a little overweight, chances are you are also inflamed. They are probably overweight in the belly – which is known as the “fat that kills”. Excess belly fat, especially that around the waist, is a major source of inflammation.

What kind of diseases caused by too much inflammation? Alzheimer, Cancer, heart disease, arthritis, dementia, multiple sclerosis, osteoarthritis, accelerated aging, etc. The risk of pneumonia and Covid risk also goes way up.

The average American diet per year is over 150 pounds of sugar. Sugar makes us fat, especially in the mid section – the gut area. We have been told fat makes us fat. This is Not true. Healthy fats make us lean. Sugar makes us fat! The worse kind of sugars are the ones you drink (Sodas, energy drinks, etc.) Eating unprocessed food is one of the number one things you can do to make the biggest difference in your health.

  • Minimize food that comes out of food coffins – plastic, boxes, aluminum foil, cans.

Mitochondria: The Key to Everything

Wellness = Energy, Energy, Energy!!!

Our energy comes from our mitochondria which are tiny energy factories packed into our cells – we have 2000 mitochondria packed into the tiny cells of each heart and brain cell.

How well our cell energy factories (mitochondria) generate ATP (the fuel that powers us) determines our biologic age.

We can’t change our chronological age (number of birthdays) unless we lie (not that
anyone we know would ever do that) 🙂

We can change our biologic age – the age we function. We all know people who are age 50 but look and feel age 80 as well as people age 80 who look and feel age 50. My Dad is a great example of the latter.

A key part of aging is losing many of our precious mitochondria. To make matters worse,
our remaining mitochondria suffer damage leading to an energy deficit. Remember,
